Instructions:
Preheat the oven to 170°C (fan oven 150°C). Ingredients should be at room temperature. For 20–24 cupcakes: mix 500 g mix, 200 g butter, and 250 g eggs (5 eggs). Mix on low speed for 3 minutes until smooth. Line a muffin tray with paper cases and fill each half full with a scoop of batter. Bake for 30–35 minutes.
For mini cupcakes: 500 g mix yields about 40–48 mini cupcakes; bake 12–15 minutes.
For a 25 cm loaf cake: bake at 150–160°C (fan oven) for 60–70 minutes.
